Chocolate Chip Pumpkin Muffins

Ingredients
 ¾ cup white sugar
 ¾ cup brown sugar
 4 eggs
 1 cup apple sauce*
 1 can pumpkin puree
 ¼ cup milk
 1 ½ cups flour
 2 tsp baking powder
 1 tsp baking soda
 1 tsp salt
 1 tsp cinnamon
 1 cup semi sweet mini chocolate chips

-Preheat oven to 400° F.

-Line muffin tin with cupcake liners. (I like to use silicone, reusable liners from IKEA). Without liner, spray tin with cooking spray.

-Combine sugars, eggs, applesauce, milk, and pumpkin puree in mixing bowl.

-In separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

-Add to wet mixture. Stir to combine.

-Add chocolate chips. Don't over mix.

-Fill muffin cups 2/3 with batter. Bake for 20-25 minutes.

Makes approximately 2 dozen.

 

 

*Applesauce can be substituted with oil.
